Foodie Friday: Quinoa Enchilada Casserole

12:00 AMMelanie M.

I had never been a fan of black beans, or any beans for that matter. My bestie introduced me to this recipe, which she got from Damn Delicious. Ever since my Husband tried it, he has been addicted. He is usually the one I have to convince to eat clean. I am usually the one that is the cook. But since having shoulder surgery last month, he has made this Blackbean quinoa enchilada for me three times! YES! Three times in a month. We've also changed it up and added shrimp which was just as delicious. I would also like to try it with shredded chicken.  You can also see the nutritional facts on the site.
If you like quinoa and eating healthy, or even if you want to try something different...TRY THIS!
