Foodie Friday: Cold Noodle Salad

Keeping with the eating healthy, clean eating regimen I have had to get creative as much as I can. All this week I have been eating salads for dinner. I came across a similar recipe in a magazine before and thought of making it again. I made this healthy salad for lunch when a friend of mine came over. Everytime I post to my social media's, my friends ask me to post recipes. I'm on of those who don't really go by a recipe and measure to a T. But this is something anyone can do. Quick and easy but still fresh and healthy!

What you will need:
Whole wheat spaghetti noodles
1 tbsp. sesame oil

Dressing
1/4 cup smooth peanut butter
3 tbsp. soy sauce
1 tbsp. rice vinegar
1 tbsp. brown sugar
2 tsp. ginger (chopped)
1 garlic clove (chopped)

Veggies (as much or as little as you want)
Cucumbers
carrots
edamame
green onions
cilantro.
You can add almost any other vegetable you'd like.

Puree the peanut butter, soy sauce, rice vinegar, brown sugar, ginger and garlic together in a blender. If needed, add water to thin it out. Blend til smooth.

Boil noodles until tender, approximately 9 minutes. Once spaghetti noodles are boiled, rinse in cold water. Drain. Toss in sesame oil. 

Toss veggies, sauce and noodles and enjoy!
