Chicken Kelaguen Recipe

There are many variations to this recipe. I, of course have a short cut, easy way of making it. The authentic Chamorro way is delicious, but this is just the quick and easy version.

Chicken Kelaguen Recipe
Things you will need:

Fresh grated coconuts (1 cup)
I have a Filipino coconut grater. If you don't have this gadget, 
click here for ways to grate coconut


Green onions

1 whole Chicken shredded and chopped
I used the rotisserie chicken just because it's easier. 
1/2 cup of Lemon juice
Jalepenos (red pepper flakes will suffice)

 Mix together and you're ALL DONE!
You can always add more or less coconut and lemon to your taste.

Best served with tortillas or tortilla chips but you can also eat it by itself. For more flavor try it with "finadene". 
1/4 Cup Lemon Juice
1/2 Cup Soy Sauce
2 Chopped green onions
2 Peppers
Mix together, chill until ready to serve.
